From master distiller Iliana Partida, owner of Hacienda de Oro and former distiller of Tres Agaves before they moved to Tequila TAP.
Blanco is the result of a meticulous blend of three distinct blancos,
achieving the perfect complexity in a single bottle:
• First Recipe (Grandfather’s tradition):7–8 year-old agaves from Amatitán, slow-cooked in traditional brick ovens, tahona stone extraction, wild open-air fermentation with agave fibers in wooden vats, and double distillation in copper pot stills.
• Second recipe (Father’s method):
Amatitán agaves cooked in high-pressure autoclaves, extracted using roller mills, open-air fermentation with bread yeast in stainless steel tanks, and double distillation in stainless steel pot stills.
• Third recipe (Iliana Partida’s innovation):Low-pressure (1.5kg) autoclave cooking, triple-pass roller mill extraction, fermentation split 50% in stainless steel tanks and 50% in wooden vats with champagne yeast, and double distillation combining stainless steel and copper. This fusion of three blancos delivers extraordinary complexity and balance, serving as the base for all our aged expressions.
