    "For our Cherry Brandy, we use a tart style of cherry commonly found in Michigan and Wisconsin. The cherries are smaller and less sweet than most of the varietals we think of when we purchase cherries from the grocery store. We work to make sure that the pits are extracted from all of the cherries so that there are no off or bitter flavors that transfer into the eau de vie. The pits are added back into the mash during the three week fermentation period, which helps to create a deep and rich spirit with lots of dimension.

    Cherry Brandy is known throughout Europe as Kirschwasser or Kirsch. Kirschwasser or Kirsch is a clear colorless fruit brandy, commonly made of morello cherries, which are dark in color and typically sour. In Germany Kirsch is often served chilled and neat as an aperitif or digestif; though it is becoming a regular component to many cocktails as the cocktail culture grows and develops."

    Their cherry brandy is produced in the summer from a mash of de-pitted cherries, with roughly 15 pounds of plums needed to produce each 750ml bottle.
