Highland agave, roasted for 72 hours in brick ovens, after fermentation allowed to rest while listening to Spanish classical music for 200 hours, then twice distilled on a copper pot still.
Lots of citrus on this one - lemon and orange - with sweet floral notes. The citrus never lets up with notes of pandan and roasted agave. Mineral bite on the finish. Interesting green sweetness from Highland agave.
