The second in Xoloitzquitle's Fuerte series.  This time with more quiote!  Wait, what's a quiote, you might ask?

 

The quiote is the part of the agave plant that shoots up as it matures.  There's always a little nub before maturation that is in the pina.  Most distilleries will cut this part out as it imparts bitterness.  That's easy, remove it and don't worry about off flavors coming through in the final product.  Or, you can be like Xolo, and harness those flavors, carefully, precisely riding the edge to get some of those intense notes but not too much.  And what's the result?  For me, the most beautifully aromatic tequila I've had the pleasure of smelling that I can remember.  Oh, yeah, and it's delicious too!
