Rhubarb is a very common botanical in amaro but Cappelletti, the maker of Sfumato, takes a left turn by using Chinese rhubarb, giving the amaro an incredibly smokey flavor. In fact, sfumato means “smoke” in Italian. Lots of tea and brewed herb notes going on in this rich amaro. Only a little bit will perfume a whole cocktail.
