Maguey pulquero from Oaxaca was previously classified by the CRM as Agave salmiana but is now considered its own independent agave. Roasted in an earthen pit, tahona crushed, cut with filtered river water, wildly fermented in pine and sabino vats, twice distilled on a copper alembic still, and rested in glass for 19 months. Only 799 bottles produced.
