Dos Maderas 5+3 Double Aged Rum
The maturation process for this Caribbean rum begins in Barbados and Guyana, within oak casks of American oak. After five years, the rum is sent to Jerez de la Frontera where it is transferred to casks previously used to age 20 year sherry "Dos Cortados" and finished for an additional three years. Hence the name "5 + 3."
On the nose, expect molasses, brown sugar and coffee with a slight grassiness. This rum is much lighter on the palate than the nose would suggest. It's spicy, with pronounced espresso notes, and a slight nuttiness from the sherry cask, which also imparts both sweet and tart dried date, prune and fig flavors. There's a fair amount of heat in the finish, with more of that sweet, earthy-coffee theme.
