Del Bac Sentinel Rye
While crafting their signature “mesquited, not peated” single malt, Dorado, the team at Hamilton Distillers asked themselves how they could impart a Southwest influence onto rye whiskey. The answer: finish Indiana rye in Dorado quarter casks. Aged in the Arizona heat from July through October and filtered over mesquite charcoal in a process inspired by American whiskey tradition, Sentinel offers a new twist on an American classic.
Nose of spearmint, dill, dried cherry, and brown sugar precedes a sprightly palate of roasted corn husk, fresh cream, orange peel, and cracked caraway with dry malt and faint char on a peppery finish.
