      While Cynar is an amaro, the 16.5% version can be used in place of vermouth. It’ll maintain a similar level of sweetness but with more herbaceous and less fruitiness. Great in a spritz with a twist of grapefruit, too. Cynar and Cynar 70 should not be used in place of each other.
