This year's special release from Cascahuín has been announced. 55-25 Añejo. A 12 month, 44% ABV, a blend of 90% tequila aged in ex sherry casks and 10% Cascahuín 48 Añejo. This is the 70 year anniversary.
A tahona is a large stone wheel, turned by donkeys, that is used to crush cooked agave. It used to be the only other option other than hand chopping. As tequila production become modernized, tahonas were replaced by mechanized roller mills. Now it's a sign of esteem and quality to use the laborious tahona. Arguably, the extended contact of the fibers with the juice is what separates tahona tequilas from the rest. And what better way to showcase tahona made tequila than Cascahuin's - made in all the traditional ways including the tahona and what comes out is an impressive blend of roasted agave, earthiness, and minerality.
