Steam roasted pinas in traditional brick ovens for 36-54 hours.
Unhurried process helps the agave retain its natural mellow flavors.
Once roasted, the nectar is washed in reverse osmosis, de-ionized water and fermented for 48-60 hours, far exceeding industry norm.
Reposado has been rested in charred American oak barrels for minimum of 6 months.
