      Caballito Cerrero doesn't produce tequila.  Nor do they make mezcal.  Instead, they continue a tradition 13 generations in the making.  

       

      The two expressions they make, Azul, aka Weber Blue agave, and Chato, aka espadin agave, are more alike than they are different. Both are musky, yeasty, and have pretty dominant notes of roasted agave, white wine, and fresh olive. The yeast almost has a grapeskin sort of quality that gives it some dryness and acidity.However, the Azul definitely still has that tequila DNA with that signature black pepper and slightly minty vegetality. The Chato, meanwhile, is all of that shared musk, yeast, white wine, and olive, but just amped up. Definitely funkier and dryer, but still creamy and has a great agave punch. Also, instead of black pepper, the Chato is a bit more like red pepper.
