65% Still Strength Blanco to 35% 11 Months Reposado (aged in Wild Turkey Bourbon barrels)

"Almatitan starts in the fields of Amatitan. Organic Single Estate Agaves of at least 7 years are harvested. They are then cooked in Stone Brick Ovens before being macerated by Roller Mills with Deep Well Water being added. The Aquamiel is put into Stainless Tanks where only Wild Yeasts are used for Fermintation. It is then distilled twice in Cooper Pot Stills before being place in Damajuanas (Demijohns)with Corncobs as stoppers at Still Strength. The Tequila is then rested for 8 months before being blended. The Still Strength Blanco is then blended with 11 months Reposado that had been resting in American Oak Bourbon Barrels. The Blend is a mix of 65% Still Strength Blanco to 35% 11 Months Reposado.

 

Aroma: Very Rich Cooked Agave that really takes on Baked Sweet Potato is the greeter with this Joven. The typical barrel notes of Oak, Vanilla, Cinnamon, and Caramel play a nice role in the mix. None are overpowering of the Agave. A nice, sweet Stone Fruit is present. It is a very pleasant note! An Earthy Hay combines with a softer Citrus smell. There is also a light Vegetal, Herbal, and Mint that adds itself to the mix.

 

Taste: Oh, that Rich Cooked Agave that definitely has a Sweet Baked Potato quality runs out the starting block. You can tell this still holds onto that Blanco profile. A sweet Vanilla hangs with a Black Pepper and Spicy Cinnamon Note. The Oak is noticeable, but more in the background and not overpowering at all. A light Caramel flavor does immerge with the Oak flavor. An Orange Citrus can be detected as well. Along with the Orange, a slightly Earthy Plum and Fig show up. And with all the barrel influenced flavors a Vegetal and Anise touch makes itself known."
