AD is an extremely unusual project from some of Mexico's finest distillers, artists and restaurateurs. The idea originated from the wild mind of Javier "El Impostor" Rodriguez, a legend, and artists in Guadalajara. He's built a reputation across the tequila, mezcal, and raicilla industry as a champion for the finest traditional Mexican spirits. His innovative spirit exemplifies the modern Mexican identity and has attracted countless luminaries to his side through his compassion, art and food. Now he's partnered with inarguably one of the finest distillers in the world, Cascahuin, to create this unique expression of the great spirit of Jalisco.
It all starts with 7 year mature agave from Cueramaro, Guanajuato, which is split into tahona crushed/wood vat fermented and roller mill crushed/cement tank fermented, all with fibers. Then, distilled separately, first through stainless steel and then copper pot. For this single barrel, 33% of the distillate is from tahona/wood and 66% from roller/cement. The resulting 110pf still strength was combined with a separate batch of 84pf blanco, proofing down to the final 96pf. Aged for 3 months in French oak that previously held Chardonnay.
